Thick brioche, vanilla custard, whipped cream & strawberriesโ€ฆ

Ingredients
French toast
โ€ข 2 thick slices of brioche
โ€ข 2 large eggs
โ€ข 300ml double cream
โ€ข 3 tbsp milk
โ€ข 1 vanilla pod, split and seeds scraped
โ€ข ยฝ tsp cinnamon
โ€ข 1 tbsp icing sugar
โ€ข 2 tbsp butter
โ€ข 1 tbsp oil

Whipped cream
โ€ข 300ml double cream
โ€ข 1 tbsp icing sugar
To serve
โ€ข 200g strawberries
โ€ข Maple syrup or honey
โ€ข Icing sugar to dust

Method
Make the custard soak
โ€ข Crack the eggs into a flat dish and add the cream, milk, vanilla seeds and cinnamon.
โ€ข Whisk well until fully combined.
โ€ข Add the brioche and soak thoroughly, turning to coat evenly.
โ€ข Leave to rest for 5 – 10 minutes โ€” don’t rush this, the soak is everything.
Make the whipped cream
โ€ข Whisk the remaining 300ml of cream with the icing sugar until soft peaks form. Set aside.

Cook the toast
โ€ข Heat butter and oil in a large frying pan over a medium heat.
โ€ข Once foaming, add the soaked brioche and fry for 3 minutes each side until deep golden.

Plate up
โ€ข Serve with a generous dollop of whipped cream, fresh strawberries and a drizzle of maple syrup or honey.
โ€ข Dust with icing sugar to finish.
