French toast done the right way! ๐๐ฅ
Thick brioche, vanilla custard, whipped cream & strawberriesโฆ

Ingredients
French toast
โข 2 thick slices of brioche
โข 2 large eggs
โข 300ml double cream
โข 3 tbsp milk
โข 1 vanilla pod, split and seeds scraped
โข ยฝ tsp cinnamon
โข 1 tbsp icing sugar
โข 2 tbsp butter
โข 1 tbsp oil
Whipped cream
โข 300ml double cream
โข 1 tbsp icing sugar
To serve
โข 200g strawberries
โข Maple syrup or honey
โข Icing sugar to dust
Method
Make the custard soak
โข Crack the eggs into a flat dish and add the cream, milk, vanilla seeds and cinnamon.
โข Whisk well until fully combined.
โข Add the brioche and soak thoroughly, turning to coat evenly.
โข Leave to rest for 5 – 10 minutes โ don’t rush this, the soak is everything.
Make the whipped cream
โข Whisk the remaining 300ml of cream with the icing sugar until soft peaks form. Set aside.
Cook the toast
โข Heat butter and oil in a large frying pan over a medium heat.
โข Once foaming, add the soaked brioche and fry for 3 minutes each side until deep golden.
Plate up
โข Serve with a generous dollop of whipped cream, fresh strawberries and a drizzle of maple syrup or honey.
โข Dust with icing sugar to finish.
