Ingredients
● 2 eggs
● 2 slices ham, diced
● 3–4 mushrooms, thinly sliced
● 2 tbsp spring onions, finely sliced
● ¼ cup grated cheese (cheddar, Swiss)
● 1 tbsp butter
● Salt and black pepper, to taste
Method
1. Crack the eggs into a bowl and season lightly with salt and pepper. Whisk until fully combined, but avoid over-aerating the eggs.
2. Heat a non-stick pan over medium heat. Add the butter and allow it to foam without browning.
3. Sauté the mushrooms until lightly caramelized. Add the diced ham and warm through. Remove the filling from the pan and set aside.
4. Wipe the pan if needed and add a small knob of butter.
5. Pour in the beaten eggs. Using a fork or rubber spatula, continuously stir the eggs while gently shaking the pan. This classic French technique creates small, delicate curds and a silky texture.
6. When the eggs are mostly set but still slightly glossy, stop stirring and spread them evenly across the pan.
7. Place the ham, mushrooms, spring onions, and cheese down the centre of the omelet.
8. Fold one side over the filling, then gently roll or fold the omelet onto a warm plate, creating the traditional French oval shape.
9. Let the residual heat melt the cheese. Finish with a sprinkle of fresh spring onions and serve immediately.
