Ingredients
* 3–4 lb chuck roast
* 1 onion, sliced
* 8 oz mushrooms, sliced
* 1 tbsp olive oil
* Salt
* Black pepper
* Garlic powder
* 1 packet French onion Soup(not dip) mix
* 2 cups beef broth
* 1 sprig fresh rosemary
* 1 sprig fresh thyme
* Mashed potatoes, for serving

Instructions
1. Add the sliced onions and mushrooms to the bottom of the crockpot.
2. Season with salt, pepper, garlic powder, and drizzle with olive oil. Toss to combine.
3. Place the chuck roast on top.
4. Season the roast generously with salt, pepper, and garlic powder.
5. Sprinkle the French onion soup mix over the roast and gently massage it into the meat.
6. Pour the beef broth around the roast.
7. Add the rosemary and thyme.
8. Cover and cook on LOW for 6–8 hours (8 hours is best for the most tender beef).
9. Remove the herbs, shred the beef, and mix it with the onions, mushrooms, and cooking juices.
10. Serve over mashed potatoes and spoon the gravy over the top.
