I can never find Gruyère cheese. I prefer that to Swiss but it’s hard to find for me
I made my own smashers out of 3/8" plate steel. They sit on the grill and warm up with it. They are seasoned as well. When I smash the meat I leave it sitting on top while I smash the rest of the patties. No parchment or anything needed. Those burgers look great, definitely going to do my onions like that next time.

Hey Hussey Bill here mid west Tn, have you ever made a mustard fried burger? I heard that is what in and out burger does, I never had it but would like to make it, maybe you could master it so we can follow your lead.
