Day 4 of my challenge: one plant-based meal a day.

Today I made a warm, comforting French lentil soup using simple ingredients like lentils, vegetables, herbs, and a splash of white wine.

What I’m learning so far is that plant-based eating doesn’t have to look the same every day. Some days are quick smoothies, and some are slow, cozy meals like this.

If you’ve been thinking about eating more plant-based, start simple. One meal a day.
