Brilliant work. I'd like to see the upper part of the turret as a vocal booth. The middle part as an audio studio control room with DANTE network audio connection to the "music room". So semi pro recordings would be possible in chateau wherever fibre 10GBit network is available.
Also Calvin's Cave could act as a 19inch server room or as a "echo chamber"

The bottles in the wine cellar ought to be inverted – so the corked ends are down. The wine keeps the corks wet and expanded (sealed) – though the wine breathes through the cork over time. "lay the wine down"
All looks great. Just wondering how you will be able to keep the stone walls in the kitchen clean from the normal kitchen grime? Don’t think you will be wanting to pressure wash them.
Can do you have things like planning control of listed building control, or French Heritage dept . ???
Amazing work, but a wine celler shouldn’t have any natural light, UV-rays can cause the wine to spoil. May be able to solve with UV film, but not sure.

Personally id go with granite countertops. Marble is softer and more prone to stains and vinegar damage. Granite is much stronger. ❤

I like the forest room. It gives a very serene feel and look to be there with a glass of French wine and just reflect on the chateau's surroundings. My wife loves the wine cellar and, of course, the kitchen, which she calls so amazing.

To summarize the next phase of the renovation,I took the time to read almost all the comments and many of the replies.Overwhelming response is finish the roof completely,that is 100%.Gutters ,sealing all the copper seams ,and all the little bids you call .The envelope of the chateau should be water tight ,with windows ,doors ,all stone work and brick .Once you do not have to worry about the exterior ,you move mentally to the interior .The masons,continue to do 😮

The image of the wine cellar is very impressive but there had better be a vineyard to go with it. Dan, these renderings are absolutely awe inspiring, it looks gorgeous. I'm not sure if you stated the end goal for the chateau but are you leaning towards it being a B & B? I've been watching your progress for years from the US and I hope that I can bring my wife to the chateau and see it in all it's glory. Just gorgeous Dan, great job. Keep it up.
From the perspective of use & durability – avoid stone counters in the kitchen & scullery rooms. They'll quickly get marks & look shabby. Embrace the stainless steel & make it an element of the decor & function. It ties in with the Viking/industrial type of vibe. & As chef you'll know the best surfaces to work from.

I admit I've found a lump in my throat on numerous occasions but todays was difficult to swallow. The images of the forest hall really struck home. Your skills and tenacity, unbridled enthusiasm is a joy to see. In this landmark week, having finished the roof I wish you every success in all the future projects. Love the mural idea. Although, the irony is that you painstakingly removed all of the trees that were in there, only to put them back (in mural form). 😄 I like it, though. It's dark, but serene. Make sure you always have honey scented soap in the bee bathroom for a more immersive experience. 🙂 The basement kitchen, etc. looks very classy. Love the Viking Dining Room idea.
