BLACK FOREST CAKE (Forêt Noire)
Chef Cyril Lignac inspired recipe
Chocolate Sponge (génoise au chocolat)
6 large eggs
170 g sugar (¾ cup + 1 tbsp)
130 g all-purpose flour (1 cup + 1 tbsp)
40 g unsweetened cocoa powder (about ⅓ cup)
30 g melted butter (2 tbsp)
1 pinch salt
Whipped Cream (Chantilly)
500 ml heavy cream (2 cups)
100 g powdered sugar (¾ cup + 1 tbsp)
1 vanilla pod (or 2 tsp vanilla extract)
Syrup
100 g sugar (½ cup)
150 ml water (⅔ cup)
20 ml cherry syrup or Kirsch (1 tbsp + 1 tsp)
Filling & Decoration
80 g fresh cherries (about ½ cup)
Dark chocolate shavings
Instructions
1. Chocolate sponge
Preheat oven to 180°C (350°F).
In a heatproof bowl over a bain-marie, whisk the eggs and sugar at high speed for about 5 minutes until light and airy.
Remove from heat and continue whisking for another 5 minutes until the mixture becomes pale and fluffy.
Melt the butter and let it cool slightly.
Sift together the flour, cocoa powder, and salt, then gently fold into the egg mixture using a spatula to avoid deflating the batter.
Add the melted butter and mix gently until smooth and homogeneous.
Pour into a buttered and floured cake tin and bake for 30 minutes.
Allow to cool completely.
2. Whipped cream
Place the cream and beaters in the freezer for about 15 minutes.
Whip the cold cream with the powdered sugar and vanilla seeds until soft peaks form.
Keep chilled.
3. Syrup
Bring the sugar and water to a boil.
Remove from heat and let cool.
Stir in the cherry syrup or Kirsch.
4. Assembly
Cut the sponge into 2 or 3 even layers.
Place the first layer on a serving plate and generously brush with syrup.
Pipe or spread whipped cream over the surface and add halved cherries.
Add the second sponge layer, soak with syrup, then repeat cream and cherries.
Place the final layer on top (soaked side facing down).
Cover the entire cake with whipped cream and smooth the surface.
Finish with chocolate shavings and cherries.
Refrigerate until ready to serve.

I so wish we had the Antique stores like you have, here in Northern Californai, USA there aren't any, so I enjoy what you get and how you repurpose cloth and ribbons and how you display items in your home. I to love to sew , with that in mind I have started looking for ribbons, lace and such to use as you do for pillows or lamp shades.

Thank you for that marvelous tour of Bordeaux as only a person from France could show it:). The architecture and the surrounding are married in a lovely way–I often look up at the windows of those apartments above and wonder about the people who populate them. What a gorgeous place to call home! Your pillows are works of art in of themselves. Watching you & your little girl brought back memories of myself baking with my daughter (she is 37 now)…time flies, enjoy every single moment. Loved her outfit. It matched the esthetic of your interiors even! I too dressed my little ones like that too, beautiful, just beautiful. Thank you:).

What a lovely video.i thoroughly enjoyed watching this. Your city is beautiful and elegant .So much history. If only the walls of the buildings could speak .What stories they could tell of another time…Your cushions look very inviting ,the textures and colours so appealing to me . At present I to am in the process of making new cushions and a wall hanging in hand applique . I have a lovely tapestry of a quirky design which I intend to make into a Teapot cosy……Children grow up so fast don't they .I love every age . Mine have all grown and are having families of there own. But there are times I wish I could turn back the clock to when they were your daughters age ,we had such wonderful times .Its a little harder now as they are scattered far and wide to the north and overseas…Hopefully next year we can all get together as my eldest daughter is planning a family holiday for us all which I am so excited about.I so miss the children…Meanwhile its back to my sewing and making my husbands favourite Lemon slice … Many thanks again .I so enjoy watching your daily travels…Jane from Down Under..xoxo
