Cracked open a Bouvet-Ladubay 'Bouvet Signature' Brut NV from ~2001-2002 with dinner tonight. Picked this up at an estate sale last year for $5 (I walked out that day with 19 bottles at $5 each). Didnt expect much from it, but was excited to try it none the less, especially after trying a new NV release a few months ago. After some digging, I found most of these Bouvet 'Signature' labels were used in the early 2000s, and I found a little stamp that had a potential date of 2001.

Pleasantly surprised with the wine! The color suggested some oxidation, but the fill level wasn't too bad. Lots of dried longan and apricot, almonds and some warm spice notes with a touch of carbonation left in it. Paired beautifully with KFC extra crispy 🍾🥂🤤☺️🍗

Estate sale finds like this are the best. It sounds like such a fun tasting experiment.
