Method: 1. In a bowl, whisk together eggs, milk, vanilla & jaggery powder. 2. Dip each slice into the mixture for a few seconds per side. Let it absorb, but don’t let it get soggy. 3. Heat a pan over medium heat. Add a little butter. Cook each slice for about 2–3 minutes per side until golden brown.
Serve with maple syrup, powdered sugar, fruit or whipped cream.

My all time favourite breakfast
Ingredients (serves 2–3)
• 4 slices of bread
• 2 large eggs
• 1/2 cup milk
• 1/4 tsp vanilla extract (optional)
• 1 tbsp sugar/ jaggery powder
• Butter (for cooking)
