INGREDIENTS
1½–2 lb potatoes
10–12 oz raclette cheese, sliced
Cured meats of your choice
Cornichons, for serving

METHOD
Boil potatoes whole in well-salted water until just tender. Drain and let steam-dry 2–3 minutes, then remove skin.
Cut potatoes in quarters and arrange them in a large ceramic frying pan. Top with slices of raclette cheese.
Bake in the oven at 350•F for 25-30min, until the cheese is fully melted and slightly bubbling.
Remove from the oven, top with cured meats and cornichon, and serve immediately.
