🐟 FISH MEUNIÈRE (For 4 People)
🧾 Ingredients
Pomfret or sole – 500 g
Clarified butter – 50 g
Refined flour – 10 g
Lime – 4
Parsley – 3 sprigs
Pepper – a pinch
Salt – to taste
👩🍳 Method (Simple & Clear)
Clean, fillet, and skin the fish. Wash and pat dry.
Lightly coat the fish with seasoned flour (flour + salt + pepper).
Heat half of the clarified butter until hot.
Place the fish in the pan and fry until golden on one side.
Turn and cook the other side until nicely browned.
Remove and place on a serving dish.
Sprinkle fresh lime juice over the fish.
Garnish with chopped parsley.
In the same pan, brown the remaining butter and pour it over the fish.
Serve immediately (the buttery froth on top is important for the authentic look ✨).
