Today I cook two lamb legs in a deep fire beneath the ground.
In the French countryside, I lower the meat into a two-meter-deep earth oven, where it cooks for several hours.
While the lamb is cooking, I prepare a tomato sauce in the fireplace — over a real open flame.
After a few hours, the meat comes out of the ground — soft, juicy, and easy to pull apart.
This is not a quick recipe.
This is cooking with fire and time.
In the end — two lamb legs cooked in the earth,
and a tomato sauce made in the fireplace.

OMG, those legs, the skin, the juices, the smells I can experience through the screen, fantastic! And that’s not a “fireplace”, that’s a HEARTH, WOWW!! But I HAVE TO ASK: with these delicious huge cuts that you are cooking to perfection…you must have a big group of family, or friends or neighbors just waiting in the other room, non? A svelte young lady like yourself is not eating all that meat alone, no way!😄😄
