I head to the rugged, frozen edge of North America—Newfoundland—accompanied by my usual accomplices in gluttony, Frédéric Morin and David McMillan of Joe Beef. It is a place known as “The Rock,” where the landscape is hostile, the weather is abusive, and the cuisine is a heavy, caloric defense against the cold. We embrace the local madness, from eating moose in the wilderness to the bizarre “screech-in” ritual that requires kissing a frozen codfish to prove you belong.

  1. For those wondering about the wine at the beginning it appears to be Louis Chenu "Les Saucours" Savigny, a Chardonnay from Burgundy from a village that only does maybe 5% of its overall production to white wines and the other 95% to Pinot Noir so quite a fun pick!
