Resturateur and hotelier Louis Dupuy used his reputation as the “best cook in the Colorado Territory” to establish Hotel de Paris Restaurant (or Louis’) in Georgetown, Colorado in 1875.

Dupuy sought a wealthy clientele and offered French champagne, Russian caviar, foie gras, hand-cut steaks, oysters, fish, and wild game. Locals were not excluded from the dining room, and often mixed with politicians and celebrities; however, they would order more affordable fare such as Welsh rarebit or cold cuts and beer.

Dupuy’s restaurant dining room and commercial kitchen have been preserved within Hotel de Paris Museum, a Site of the National Trust for Historic Preservation and member of Great American Treasures museum alliance.
