Cool morning mists from the Ciron River meet warmer afternoon sunshine, creating the perfect conditions for Botrytis cinerea, or “noble rot.” Instead of ruining the fruit, this naturally occurring fungus concentrates the grapes’ sugars, acidity, and flavors, producing wines with incredible richness and remarkable balance.
It’s a process that can’t be forced and doesn’t happen every year.
