Imagine the cozy, rich flavors of French onion soup—but where the ONION itself is the superstar. These soft herby, buttery melting onions are my caramelized dream that turn this humble veggie into the centerpiece I brag about. I like it as a nice side dish on it’s own, but you could put it on toast or your favorite protein.
French Onion Soup Melting Onions Recipe!
Total Time: 1 hour & 10 min.
Serves: 8
INGREDIENTS:
2 Tbsp. extra-virgin olive oil
½ tsp. table salt
½ tsp. ground pepper
2 Tbsp. butter, melted
1 Tbsp. fresh thyme, divided
4 large onions, peeled and cut into 1-inch slices
⅓ cup panko breadcrumbs
½ cup beef broth
1 Tbsp. sherry vinegar
2 oz. Gruyere cheese, shredded
2 oz. mozzarella cheese, shredded
Directions:
1. Preheat oven to 450°F
2. Whisk together oil, salt, pepper, 1 tablespoon of the butter, and 1 tablespoon of the thyme in a medium bowl. Add onions to a 9 -x-13-inch metal baking pan in an even layer (don’t use glass or ceramic, which might shatter). Brush herb butter mixture all over onions. Do not discard bowl. Roast in preheated oven until browned on both sides, about 30 minutes, flipping halfway through.
3. While onions cook, add panko to reserved bowl with 1/2 teaspoon of the thyme and remaining 1 tablespoon butter; toss until evenly coated. Add panko to a small nonstick-skillet over medium-high. Cook, stirring occasionally, until fragrant and golden brown, 2 to 3 minutes. Remove from heat and allow to cool until ready to use.
4. Flip onions again. Carefully pour broth and vinegar into pan. Continue roasting at 450°F until the broth is reduced and the onions are very soft, about 10 minutes more. Remove from oven.
5. Increase oven temperature to broil. Mix together gruyere and mozzarella in a small bowl. Evenly sprinkle onions with cheese mixture. Broil until cheese is melted and bubbling, about 1 minute. Top with herb panko and garnish with remaining 1/2 teaspoon thyme. Serve with pan sauce.
