Here is how to make this incredibly delicious French Onion Grilled Cheese. 

Ingredients:
– Loaf of Crusty Bread
– Sweet or Yellow Onions
– 3-Cheese Blend
– Gruyere Cheese
– Beef Stock
– Mayo
– Salt & Pepper

Step 1: Caramelize the Onions
Thinly slice onions before adding to a pot with a little olive oil and a sprinkle of salt. Sauté over medium-high heat, tossing every 5-10 minutes, for 40-45 minutes, ensuring that the onions don’t burn. 

Deglaze the pan with a little beef stock, add a bit more salt & pepper, and set aside. 

Step 2: Create the Sandwich
Cut thick slices of fresh, crusty bread and spread mayo on one side of each slice. Add a generous portion of the 3-cheese blend to one half, gruyere to another. 

Place mayo-side-down in a pan over low-medium heat, adding caramelized onions to one half. Cook until the cheese is mostly melted, before carefully combining the halves of your sandwich. 

Continue to cook & flip, until the bread is well-toasted and crispy on both sides. Serve hot from the pan while the cheese is still perfectly melted and creamy.
