  1. Mango French toast

    Mango season has to be one of my absolute favorites – and I love experimenting with fun, easy desserts using this king of fruits!

    This Mango French Toast is inspired by a dish I tried at a restaurant in London. It was such a simple idea, but the way they put it together made it look and taste so special, just had to recreate it at home.

    It's a super easy recipe, perfect for summer
    -and trust me, your guests are going to love it!

    Mango French Toast

    Ingredients

    For the mango custard
    • Milk – 2 cups
    • Custard powder – 2 tbsp
    • Water – ¼ cup
    • Sugar – 3–4 tbsp (adjust to taste)
    • Mango puree – ½ cup

    For the French toast
    • Bread – 1 thick slice
    • Butter – 2 tbsp
    • Sugar – 2 tsp
    • Milk – 4–5 tbsp

    For assembly
    • Vanilla ice cream – 1 scoop
    • Fresh mango slices – few
    • Pomegranate seeds – for garnish
    • Pistachios – chopped

    Method
    • Bring milk to a boil, then reduce flame; mix custard powder with water and slowly add to milk, whisking continuously till smooth and lump-free.
    • Cook on low flame for 5–7 minutes until thick, add sugar, mix well, cool completely, then stir in mango puree and adjust sweetness.
    • Generously butter both sides of the bread and toast on low heat until golden and crisp.
    • Sprinkle sugar on both sides and cook again till it caramelizes slightly.
    • Gradually pour milk over the toast, letting it soak and turn soft, rich, and slightly custardy.
    • Spread a generous layer of mango custard on a plate and place the warm toast over it.
    • Top with vanilla ice cream, mango slices, pomegranate seeds, and pistachios, and serve immediately.

    Tips
    • Keep stirring custard continuously to avoid lumps; strain if needed.
    • Always cool custard before adding mango puree to prevent curdling.
    • Don’t hold back on butter, sugar, and milk, that’s what gives the toast its soft, indulgent texture.
