French–Japanese Miso Mushroom Tempeh Bourguignon
Classic French depth meets Japanese umami — rich, glossy, and deeply comforting.

INGREDIENTS
1 C tempeh, large cubes
2 C mushrooms, mixed (cremini + shiitake), halved or thick sliced
1/2 C carrot, thick diagonal slices
1/2 C onion, large chunks

2 C water
1/2 C Burgundy red wine or equivalent
3 tsp onion powder
1 Tbsp white or red miso
1 Tbsp tamari
1 Tbsp tomato paste
1 tsp fresh thyme (or 1/2 tsp dried)
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp black pepper
1/2 tsp fine salt

1 Tbsp balsamic vinegar
1 tsp lemon juice

Optional garnish
Parsley
Black pepper
Lemon zest

METHOD
Heat large heavy pan over medium-high.

Add mushrooms dry (no oil).
Cook 6–8 minutes until:

• moisture evaporates
• deep browning develops
• strong umami aroma

Remove and set aside.

In same pan, add tempeh with splash of water.
Cook 5–6 minutes until lightly browned and firm.

Add carrots and onion.
Cook 5 minutes until slightly softened.

BUILD BOURGUIGNON BASE
Add:
• wine
• water
• onion powder
• miso
• tamari
• tomato paste
• thyme
• garlic powder
• smoked paprika
• salt
• pepper

Whisk to dissolve miso and tomato paste.

Return mushrooms to pan.

Simmer 20–25 minutes uncovered until:

⭐ sauce reduces and thickens
⭐ vegetables tender
⭐ flavors concentrate into glossy stew

FINISH
Stir in:

• balsamic vinegar
• lemon juice

Taste and adjust seasoning.

Sauce should be:

⭐ rich
⭐ silky
⭐ deeply savory
⭐ slightly tangy

PLATING (Michelin Style)
Serve in shallow bowl.

Arrange:

• tempeh + mushrooms as center mound
• spoon sauce around (not drowning)

Finish with:

• parsley
• lemon zest
• cracked pepper

Optional: serve over cauliflower mash or lentil base
