  1. Its not a french thing. People all over the word practice or practiced the „head to tail“ mentality. Its just seen as old fashioned In first world countries. But environmental and ethical reasons lead to this mentality again. Using the whole animal and not just the best bits is traditional and brings back some „forgotten“ delicacies

  2. I don't eat calv or lamb at all, because I find it absolutely perverted to already slaughter animals at that age.
