    Ingredients:
    3 x 180–200g white fish fillets (of choice)
    Salt and black pepper
    Extra plain flour, for dusting
    Vegetable oil, for frying
    Lemon wedges, for serving
    200g plain flour
    50g cornflour
    1 tsp baking powder
    330ml ice-cold soda water or light beer
    1 tsp salt

    Chips:
    1kg large potatoes, peeled and cut into thick chips or Ready made chips
    Vegetable oil, for frying
    Salt
    Chicken salt, for serving (optional)

    Tartare Sauce:
    200g mayonnaise
    1 tbsp capers, finely chopped
    1 tbsp gherkins, finely chopped
    1 small shallot, very finely diced
    1 tsp Dijon mustard
    1 tsp lemon juice
    1 tbsp fresh parsley
    Black pepper, to taste

    Steps
    1. Cut potatoes into thick chips and rinse under cold water until water runs clear. Pat completely dry.
    2. Heat oil to 160°C. Fry chips in batches for 5–6 minutes until tender but still pale. Remove and let cool.
    3. For tartare sauce, mix mayonnaise, capers, gherkins, shallot, Dijon mustard, lemon juice, parsley, and black pepper. Chill until needed.
    4. In a bowl, whisk plain flour, cornflour, baking powder, and salt. Slowly whisk in ice-cold soda water or beer until smooth and slightly thick.
    5. Increase oil temperature to 180°C.
    6. Season fish lightly with salt and pepper, then dust in flour.
    7. Dip fish into batter, allowing excess to drip off.
    8. Fry fish for 4–5 minutes until golden, crisp, and cooked through. Drain on paper towel.
    9. Fry chips again at 180°C for 2–3 minutes until golden and crispy. Drain and season with salt or chicken salt.
    10. Serve fish and chips hot with tartare sauce and lemon wedges.

  2. i love the videos man, but i’d recommend recording on a higher fps, it will increase the smoothness of the video, as right now it seems choppy- but anyways, keep it up!
