A French quiche (tart) with a homemade, delicious ratatouille. In this video, we show you how to make a homemade ratatouille and how to add it to a homemade tart dough together with cream and eggs! This recipe unites two dishes that are both very French: The quiche and the ratatouille. The recipe is easy to make and does not require a lot of tools or ingredients.
Ingredients for 4 persons:
Ratatouille:
1 eggplant (aubergine)
1 zucchini (courgette) – medium sized
1 onion
1 red bell pepper
1 can (400 gr) of crushed tomatoes + 1/4 can of water
1 tbsp of dried thyme
1tbsp of dried oregano
salt & pepper
Cream/egg mixture:
3 eggs
150 ml cream (of around 30% fat)
200 ml semi-skimmed milk
salt & pepper
50–100 gr shredded cheese (cantal, gouda, parmesan, mozzarella, emmenthal… The choice is your’s!)
1-2 c. tbsp Dijon mustard
Dough:
300 gr flour
150 gr salted butter, soft
a pinch of salt
1 whole egg
a few tbsp of water
