When oak is bent slowly by hand using fire and time, the wood fibres stay intact. Those intact fibres release natural vanillin, warm spice and silky complexity into the wine over 18 months of ageing. Machine-made barrels compress and break those same fibres in seconds — producing a measurably different flavour profile.
The greatest Burgundy houses still insist on hand-made barrels. Not for tradition. Because the wine is better.
