What happens when very classical French cooking is placed inside modern Bangkok — along the Chao Phraya River, inside ICONSIAM, surrounded by a city with its own deep and confident food culture?

Blue by Alain Ducasse is a one-star Michelin restaurant, but what interested me more was the atmosphere: calm, restrained, and unhurried. The food is French, but the experience feels distinctly shaped by where it exists.

The kitchen was led by executive chef Wilfrid Hocquet by the time of the filming, and the restaurant sits quietly above the river — offering a different way of experiencing both French dining and Bangkok itself.
