I knew Frenchie would have a little problem with this since it's not marinated in wine and that is why i recommended this a few weeks ago :D. But the reasoning in the beginning of the video from Pierre Koffman recipe and Fallow is that they are not using a rooster and that means wine marinade would ruin the mouthfeel of the dish. When you are doing 3 star michelin dishes, even something as small as that matters. Obviously the traditional receipe is best in most cases, but if you want to reach prestige level, you need to refine things.
I sometimes think that the whole "Michelin" world can get a little bit wankery, but it's fasinating to learn from Fallow how much effort it actually takes to make those dishes.
If you would like something a bit different from Fallow they did a while back a video where they went through the costs of building a high level restauraunt kitchen for one of their restaurants. It was fascinating to learn how much it really costs. The video is called "Inside a Real Restaurant Kitchen: What’s Actually Worth Buying"

I would highly recommend checking out some of Sorted's videos. They did a really cool thing recently where they had they made 10 chicken dishes with 10 full chickens in under an hour. Very cool.

Hey brian. Been a fan of the show for quite a while, i believe from barely before frenchy stayed permanently; so when you guys where in the old studio and I've been wondering something for a while. Why do you mention the not so typical chef; where did that come from?. Was it something you just invented and it stuck or was it something from prior the show?.

Brits have the habit of taking a very well established traditional dish..and making it more complicated than it needs to be..and ….its not longer the dish..its a version of it
