As soon as I saw this faced pink rhubarb in the shops, I HAD to get it and make something delicious – simply baked with some spices and lemon until gooey and sticky, it’s SO GOOD this time of year and makes for the best breakfast bowls ✨

And once you have tried homemade granola there is NO GOING back as shop bought blends do not compare! This granola is chunky, golden, crunchy and packed with fibre, protein, lots of gut diversity and plant-points and is ADDICTIVE 😅

For the Rhubarb:

For the granola:
