Ingredients:
1 ball pizza dough (16 ounces)
RED WINE REDUCTION SAUCE:
INGREDIENTS:
1-2 tablespoons olive oil, avocado oil or butter
1 medium shallot, minced
1-2 cloves garlic, minced
1 cup dry red wine (Merlot, Cabernet Sauvignon, Pinot Nior)
1 cup beef stock
1 teaspoon balsamic vinegar
fresh rosemary sprig
bay leaf, optional
1 tablespoon butter
salt and pepper to taste
DIRECTIONS:
In a medium skillet, on medium high heat the oil.
Add the shallot and saute for 1-3 minutes.
Add the garlic and saute for another minute.
Deglaze the pan with the wine and simmer until reduced by half.
Add the beef stock, balsamic vinegar, rosemary and bay leaf.
Continue to simmer until the sauce thickens enough to “streak” the back of a spoon. Also known as nappe, a French term indicating the perfect consistency of a sauce. It should be thick enough to coat the back of a spoon, leaving a clean line or streak when you draw your finger through it.
Strain through a fine mesh strainer.
Off the heat, slowly add the butter, stirring until fully incorporated and the sauce is shiny and velvety smooth.
Finish by seasoning with salt and pepper to taste.
PIZZA TOPPINGS:
4 ounces mozzarella
4 ounces goat cheese
3-4 slices proscuitto
½ cup arugula
1/8 teaspoon hot pepper flakes
2 tablespoons Parmesan or Romano cheese, grated OPTIONAL
1-2 tablespoons olive oil
Black pepper
