When my knife skills are a bit off, I consider it rustic cut. Sometimes I do it intentionally. I don’t mind when certain things are uneven, especially onions. I like that some cook faster and caramelize while others are a bit thicker and I can enjoy the bite of the larger pieces. 🙂
