2026 is the year I eat a lot more edamame. It’s a rich source of protein, fibre and iron – and it’s really simple to cook with.

Most edamame comes par-cooked and frozen so all it takes is a few minutes in boiling water. Then it can be added to salads, noodles – or blended with fresh herbs and plant-based yoghurt to spread all over toast.

And – if you want something a bit more special – you can pipe it over toast like I do! A single serving of this whipped edamame on toast includes:

  1. Love edamame, but watch how much you eat. The phytoestrogens are a real risk to men. I mean, you gotta eat a lot, but if you have multiple sources of soy based protein, it can put you at an increased risk. Not a huge risk, but most don't account for the many products that use soy instead of animal protein when supplemented so it can add up.

  2. In adulthood I developed an allergy to avocados and I was so sad because I really love avocado toast for breakfast. This looks like a lovely alternative, I can’t wait to try this! 🙂

    All beans (like edamame) are legumes and all legumes are peas

    Whipped edamame (soybeans) are mushy peas on toast

  4. You should try out molletes!! They are a staple for a lot of Mexican people. It’s a bread roll (called a bolillo) with blended black beans and cheese on top. You toast that and then add pico de gallo. I could have it for every meal!
