Cramique A Parisian Bakery Classic
Fluffy buttery and studded with pools of melted chocolate this classic Cramique draws from Belgian and Northern French baking traditions. Traditionally enjoyed for breakfast or an afternoon treat this enriched bread has a light pillowy crumb and gentle sweetness in every bite. Using the Tangzhong method guarantees an ultra soft texture making it a perfect homemade alternative to the bakery favorite. Ingredients
For the Dough
– ¾ cup (110g) all purpose flour
– 2 cups (250g) bread flour high protein (14g per 100g)
– 1 packet or (10g) fresh yeast
– 100g warm milk
– 1 whole egg + 2 yolks
– 1 tsp bourbon vanilla paste
– ⅓ cup 60g granulated sugar
– 1 tsp salt
– 3½ (50g) tbsp soft butter
– ⅔ cup (150g) semi sweet or dark chocolate chips
For the Tangzhong Extra Softness
– 3 tbsp (50g) milk
– 3 tbsp (50g) water
– 2 tbsp (20g) bread flour
For the Topping
– 1 egg yolk + 1 tbsp milk for egg wash
– 1 tsp caster/granulated sugar for dusting
Instructions
Step 1. Prepare the Tangzhong
1. In a small saucepan whisk together the milk water and bread flour.
2. Cook over medium heat stirring constantly until the mixture thickens into a smooth paste.
3. Remove from heat and let cool completely.
Step 2 Make the Dough
4. First, mix the warm milk, sugar, and yeast, let rest for 5 min, then add the eggs and vanilla bourbon paste (or vanilla extract).
4. Mix in the all purpose flour, bread flour, and salt.
6. Add the cooled Tangzhong and salt then knead for about 10 minutes until smooth.
Step 3 Incorporate the Butter
7. Gradually add the soft butter kneading continuously until fully incorporated The dough may seem sticky at first but keep kneading it will become smooth and elastic.
8. Cover with a clean towel and let rest for 20 minutes.
Step 4 Add the Chocolate Chips and Shape
9. Gently fold the chocolate chips into the dough until evenly distributed.
10. Shape the dough into a round loaf and place it on a parchment lined baking sheet.
Step 5 Proof and Bake
11. Cover loosely and let the dough rise in a warm place for 1 to 2 hours or until doubled in size.
12. Preheat the oven to 350°F (180°C).
13. In a small bowl mix the egg yolk and milk then brush it over the dough Sprinkle with caster sugar.
14. Bake for 25 minutes or until golden brown If the top browns too quickly tent with aluminum foil halfway through baking.
Step 6 Enjoy
15. Let cool slightly before slicing and enjoy warm This bread is best enjoyed fresh and makes a beautiful homemade gift.
