I’m addicted to sugar and desserts, so today I turned breakfast into dessert.This cinnamon apple French toast is made with a red bean brioche bun soaked in a cinnamon milk egg wash, then pan-fried until golden and crispy on the outside but soft and moist on the inside.
In the US, French toast is a breakfast or brunch menu, but for me it’s 100% dessert — and I don’t mind eating it first thing in the morning.
The apples are cooked down with cinnamon and sweetener until warm and caramelized, giving the perfect contrast to the soft toast. Topped with whipped cream, this was honestly one of the coziest breakfasts I’ve had in a while.
Tip: If you have time, let the bread soak overnight for extra custardy texture (I didn’t… but next time I will).Next version might be strawberries or bananas with less sugar — balance, right?
