My family used to take holiday ski trips to Canada and one of the things I anticipated most was a bowl of French Onion Soup. We just had our first snow, and the first thing that came to mind was French onion soup, so that’s what we’re making today.
Ingredients:
3 large onions – halved and sliced with the grain
3 TBS unsalted butter
8 cups beef broth
1 TBS garlic
3 bay leaves
1 cup dry white wine
1 TBS sherry or cognac
1 TBS flour
salt & pepper to taste
crostini
sliced gruyere
grated parmesan
Equipment:
large pot
dutch oven
cheese grater
knife
kitchen torch or broiler
