In this video we twin an affordable pork loin — still budget friendly in the face of otherwise crazy meat prices — with a classic French sauce: Sauce Soubise.
Sauce Soubise is quite simple: A bechamel with added cooked onions, which are typically blended into the sauce. We passed on the immersion blender for a more rustic sauce; the Soubise cooked as shown was deliciously sweet.
We dry-brined this pork loin for two days, which certainly helped its juicy quotient.
This is a quick meal too that will only need about 20 focused minutes in the kitchen although total cook times may be longer for the pork loin.
We used a Ninja air fryer, our favorite. Other air fryers may differ so approach total cook time cautiously.
