I love this presentation, it looks really delicious! My personal top tips for ratatouille are:
1) Make sure you keep the juices from the roasted peppers, don't let them flow off the board!
2) If you can get yellow AND green zucchini, it makes the presentation even more appealing
3) Use a mixture of kinds of tomatoes. I use San Marzano for the sauce, and bigger heritage ones for the slicing
4) Salt the zucchini and aubergine heavily and let them sit for 30 minutes or so, driving out some of the water. I find this helps both of these vegetables cook better
5) Gently pre-fry the zucchini and aubergine a little to get a hint of Malliard reaction in there
This does make the dish considerably more of a faff, but ups the flavour and final texture in my opinion. The salting and frying also means the final sauce doesn't end up quite as watery. And of course, as it's a big ingredient in the dish, use really nice quality extra virgin olive oil!
