  1. What a blessing it would be to have a friend like you, Kevin. You are so thoughtful and kind. Imagine how the world would be such a better place if there were more people like you. What a great duo you and Lizette make. Dbe is a very talented gal.

  2. Well, I've had carpal tunnel and cubital tunnel on my right wrist at the same time. My friend also had both surgeries and her husband hired someone to help with the cooking and household chores for a couple of weeks. So I repeatedly reminded my husband that he would have to do the cooking for us for a week or so. I had the surgery. The first day he prepared our meals, the second day he said, lets go out for dinner. The third day I was chopping vegetables and cooking our dinner. It was a little awkward holding the knife but doable. A few years later I had carpal done on my left wrist and I drove the following day although I wasn't comfortable driving with the right wrist surgery for a week or so.

  3. Kevin this is so kind of you❤ I have done this for a relative for many years. I had 3 surgeries in last 3 years, and I wish I had someone do this for me just once. I had to prepare food in advance in poor condition, it was an experience! So this will be so appreciated by Victoria and her husband❤

I have lots of zucchinis and always welcome new recipes. I may try yours (I am allergic to salt), so with nutritional yeast in place of all the cheese, and cottage cheese perhaps which I rinse to remove salt and add 15% cream back into.
I can tolerate baking powder but not baking soda if minimally used. And to get more puff (incase I use the minimum baking powder), I will whip the egg whites separately and hopefully get volume like that. Like making a cake or a soufflé.
I will have to make salt-free croutons.

  4. What a wonderful friend you are. Preparing the zucchini casserole each summer is such a beautiful & thoughtful tribute to your mother. May all the kindness you share come back to you threefold.

  5. Lucky Victoria! You are such a thoughtful friend. As I have an excess of plums, I was wondering what to do with them. Now I know . . . I plan on making your spiced plum cake this week..Thanks for the recipe!

  6. Hello Kevin, I am a guitar player who has had carpal tunnel surgery. My experience was I had the surgery in October and played my first gig afterwards in March. November I was still having pain. December I began feeling a bit better by January I wanted to play but couldn’t handle it yet. I began rehearsing with my band in February and we played in March. The time not playing was good and bad. The pain for the first two weeks was pretty bad. I am just telling you the truth here I don’t want you to think it’s a piece of cake. Different people have different reactions. I am older. I was 74 when I had the surgery. So if it’s someone who is younger, it might not be as difficult. I am also left-handed and it was my left hand, of course. I am lucky my right arm Seems to be doing just fine. Many people have to have both hands done. I love hearing you all play I will be sending healing vibes.

  7. It was a very kind gesture for you to make food for your friend and playing partner. I had the surgery last October. I was most grateful when a couple of friends brought casseroles…. I was in fairly severe pain for about two weeks after the surgery. Slowly I felt better. Certain motions were painful. I continue to wear my brace for about a month at least part of the time. Of course I was managed for two weeks then I wore my brace for two weeks after that so I guess it was more like a month that I experienced pain.. Not being able to do things easily because your hand is completely immobilized is the hardest part. Again it is so kind of you to provide food for your friend. Oh yes now my hand is doing great no tingling. I’m back to playing and going strong. I even bought a new guitar. It’s an Taylor 512 classical guitar with steel strings. Sounds as good as a Martin. I love it.

  8. Thank you for your vegetarian dishes. These days I am trying to be vegetarian and I'll be looking forward to more of similar dishes. Thank you. Love to Avery.

  9. I my sentiments exactly as everybody else you are such a wonderful person for doing this. It doesn’t matter how fast the surgery is or complicated maybe not but reaching out and showing that you care that’s true friendship,. And you’re right about using aluminum pans I get it, but I’m sure it’s been a long day for them and I bet they’ll be grateful. They don’t have to do dishes. God bless you. One quick question are those the plums you got when you were in Claverick?

  10. You always make everything you touch so beautiful. God has blessed you with so many gifts. Thank you for sharing them with us and others. I hope your friend/piano partner is soon fully recovered.

  11. I had the surgery….being a computer tech I had to have it…1 week later I was back to work..hope hers goes as well as mine did…So nice of you to make this glorious meal for them…what a friend you are and to include the gorgeous flowers….

  12. Absolutely gorgeous meal for Victoria! It boxed up so beautifully with the flowers. With all the strife in this world, it was so uplifting to watch this!❤

  13. Thank you so much for the dinner following my surgery. It was so thoughtful of you and I'm so grateful you spared Albin some work as well.everything was so delicious. The soup was wonderfully refreshing, the zucchini jack casserole was perfect – tasty, nourishing, and not heavy – and the spiced plum cake was heaven on a plate. Thank you so much for your friendship and your thoughtfulness.

  14. Kevin, what a dear friend you are to fix dinner and flowers for your friend and her husband. You have such a sweet and kind disposition. Thank you for sharing.

  15. Hello Mr. Jacobs. You are a very good friend. I like the recipes. The cucumber soup I will give a chance. The plum cake also looks very tasty. When I bake it, I have to hide my scales. All the best for Victoria. Take good care of yourself and have a nice week. Best wishes from Marlieb (Germany)😄

  16. You are such a thoughtful friend. The dinner and the flowers will go a long way in jump starting Victorias recovery. Another idea for my bumper crop of zucchini. We had a string of 90+ degree weather out here in the PNW, and that soup really sounds refreshing for a very warm afternoon or evening. Even my picky eater hubby says he thinks the casserole sounds good.

  17. I made the plum cake today, why didn't the plums soften up at all? Did you use a certain kind of plum? I'd really like to make it again if I can get the plums to soften up.

  18. Hello there Kevin, Just made the cucumber soup..oh my…Honey, it is delicious…thank you for sharing…..still thinking about the plum cake and the casserole…you are the best….Melanie Fay I believe your friend and her husband are the luckiest folks around…hope Victoria has a quick recovery….

  19. How wonderful for your friends not to have to cook dinner after a very trying day. I had carpal tunnel surgery 30 years ago. I seem to remember that it took about a month for things to settle down. The first few days after surgery were the most difficult and I kept my arm in a sling which helped a lot. Good luck wishes to Victoria xx

  20. This is such a lovely, thoughtful thing to do. Hope all went well with the surgery. Speedy recovery victoria. Well done Kevin.
