  4. The video angles should be better esp wrt what’s actually happening in the pan .

    I think you absolutely nailed the 3rd technique but it would be better for everyone to see the texture of the eggs. Each one has a different texture and mouth feel . I loved the third one – the roux brothers would be proud of you
