Ya need a longer pipe for leverage
my Dad has a fry cutter like that but its much older, long wrought iron handle so it gets the taters in one go.

Try cutting the end of the potatoe it might cut smoother
If you can get ahold of duck fat try making french fries in that, there is nothing that can compare in fact I think that's what McDonald's used back in the day
