As Chef Martin Picard says, maple syrup is part of the identity for Québec residents. Prior to Picard, nobody coming from the culinary world had bought a sugar shack — a cabin where maple trees are tapped, and the sap is then collected and boiled down to produce maple syrup.
With their maple syrup, he and his restaurant partner Marc Beaudin take up the challenge of preparing different menus year after year with maple syrup as the all-star ingredient for their restaurant, Au Pied de Cochon Sugar Shack in Montréal. Martin creates a few of his favorite dishes including a White Russian with Maple Marshmallow, Maple Syrup Toffee, and a Meat Pie with Warm Foie Gras Salad that “makes sense [because] it doesn’t make sense.”
