if bread machines have a big glass window on top, cover with foil, they loose a lot of heat through the glass.

Man my parents got a pretty simple bread machine for their wedding. We weren't allowed near the kitchen while it was working because the bread could fall but having fresh bread with dinner was sooooo worth it

The bread machine is pretty nostalgic for me. My dad woukd use it to bake bread all the time and I loved it because he couldn't burn the crust.
Why make bread by hand? The machine makes one loaf at a time. I need two loaves for a week. By hand I can bake both of them at the same time. But if I get my hands on a bread machine I would definitely try it.

Whats not to trust about a bread machine? If anything, you have the advantage of a machine that will precisely keep your dough at the proper temp and humidity when proofing immediately after it finishes mixing. The only real downside is you will always get the same shaped loaf so you cant really do rustic or specialty loafs right in the bread maker itself.
My Japanese mom uses her zojirushi bread machine for mochi and mochi only but it’s held up for maybe 14 years now

The problem with bread machines is that it would take you about 1.5 years to recover the cost of the machine alone (ingredients extra) when compared to buying store bought bread (assuming you buy bread continuously ever 3 days). If you buy once a week, that number becomes closer to 3 years. Factor in the ingredients cost and it's more like 5-6 years to break even.
The delay function… So you wake up to fresh, warm bread…. Unparalleled

I make bread with a Japanese cast iron bundt pan that has a lid and is designed to be cooked on the stovetop. It's amazing. Oigen is the company that makes them.

Every time I go to Goodwill I consider getting one to experiment with. I wonder if you could use it for organic extraction or if it has to run at a very high temp. Might be fun to play with. In my household we just make traditional sour dough but these might be perfect for households unwilling to dedicate that much time to making bread for the week.
Mine tastes too yeasty. But i just follow the recipes 😭
