Claire: adds hard-boiled egg yolk to inhibit gluten formation
Also Claire: uses a mixer with the dry ingredients
(Note, this seems to be an American thing, I don't know any other chefs or home cooks that try to mix uses a hdn mixer or stand mixer once the flour is added, but it definitely creates more gluten and makes things tougher, I get for massive batches bakeries will do it, but it's better to hand mix things once the flour is added)
