Al Capone’s favorite meal, next to Linguini with Walnut Sauce. When he snuck off to his hideaway in North Wisconsin during the winter, his chef would make this often. We know that as fact, however so far no record exists of the specific ingredients rolled up into the pork belly. I included what would have been typical back in his day.

4 – 5 LB Pork Belly
Italian Seasoning
Roast Garlic Paste
Rosemary Salt
Black Pepper
Soprasatta
Hot Capicola
Prosciutto
Provolone
Grated Parmesan
Chopped Black Olives
Sliced Roasted Italian Peppers
Kitchen String
