when you’re cooking with olive oil it’s a bit of a difficult topic because there’s a lot of studies that have been done that claim if you’re going to fry french fries with olive oil it’s healthier and the oil is two to three times more productive you don’t have to change it out as much as you do with like cheap vegetable oils having said that they’re controlling the temperatures the reality is all oils have what’s called a burn or a smoke point that’s the point at which all the value that you’re getting from that oil is starting to go away and it’s becoming bad you’re burning the oil you should use a finishing oil to finish things if if you want to sauté something if you want to cook something in a beautiful oil do it you’re going to put in a a beautiful piece of bikya steak and put it at 500° for 20 minutes you do not use this oil however if you got a fish you want to take it out put a little oil on before you serve it beautiful you use these things to complete something not to start something that’s going to be really really really cooked
