Ingredients:
• 1 large eggplant, thinly sliced
• 2 zucchinis, thinly sliced
• 2 yellow squashes, thinly sliced
• 1 red bell pepper, thinly sliced
• 1 yellow bell pepper, thinly sliced
• 1 orange bell pepper, thinly sliced
• 4 large tomatoes, thinly sliced
• 1 red onion, thinly sliced
• 4 cloves garlic, minced
• 2 tablespoons olive oil
• 1 teaspoon dried thyme
• 1 teaspoon dried basil
• Salt and pepper to taste
• 1 cup tomato sauce (store-bought or homemade)
• 1/4 cup grated Parmesan cheese (optional)
• Fresh basil leaves for garnish
Twist Ingredient:
• 1/2 cup balsamic glaze (for a sweet and tangy finish)
Instructions:
1. Preheat Oven:
• Preheat your oven to 375°F (190°C).
2. Prepare the Tomato Base:
• Spread the tomato sauce evenly on the bottom of a large baking dish.
• Sprinkle half of the minced garlic over the sauce.
