attraction burgundy is also rich in
history natural beauty and Gastronomy

take you along on this journey from djon
to M where we will experience a wide
variety of traditional Regional
Specialties and taste a few wines along
the way

Ona we begin in djon capital of the
burgundy region located just an hour and
a half from Paris by train
it’s easy to find all of the historical
Treasures of this city thanks to LA or
the owl route simply follow the owl
medallions along the pavement to find 22
historic sites in this
city We Begin here at notredam with the
owl no one quite knows the history of
the owl but it’s said that if you touch
it with your left hand your wish will be
granted

the most important of these historical
sites is the P Duke former residence of
the king and Dukes of
[Music]
burgundy the oldest parts of this
building date from the 14th and 15th
centuries but most of what we see today
is from the 17th and 18th
century the buildings today house the
Fine Arts Museum the town Hall and the
tourism
office the Tower of Philip Leon stands
proudly in the center watching over the
city you can climb all 316 steps for a
stunning panoramic view over djon and
the surrounding

area France is synonymous with
gastronomy
and whether you come for the Michelin
star restaurants or the humble Quon food
will no doubt play a big part in your

specialty we think of is of course
mustard but spice bread has just as long
of a history starting in the 1300s when
margarit defra the wife of Philipi
brought this amazing specialty to the
table of The Dukes of burgundy today we
have the immense pleasure of being at
Mero Pon an independent family business
for over 225 years Madame p is a great
honor and pleasure to talk with you
today nice to meet you today nice to
meet you um I am blown away by the fact
that your company has been in business
for over 225 years especially when you
are the last existing gingerbread house
of the 12 that were here in the 20th
century to what do you attribute this
success a few things it’s because we are
a family so everybody has worked a lot
to keep this business in order and in
good heal the other thing is also that
we have been very cautious to keep our
knowledge our our
savare and it’s a small team of about 40
people is that correct yes it is correct
40 people uh working here a bit more at
the end of the year because we are all
working for Christmas and speaking of
Christmas Americans know gingerbread as
the little um figures that we put on our
Christmas trees but you have a wide
variety of products it’s more than just
that could you explain a little bit what
your gingerbread is yes we don’t use the
the word of gingerbread for our product
it’s more like a spice bread there is no
butter in it so it’s low fat and no
ginger in it and you also have a product
called leonette can you explain what
that is yeah leonette is like a muffin
and it’s filled with Jam so the most
famous is orange Jam in the former time
orange was a luxury fruit and part of
what keeps your business fresh and new
is that you’re always adding new new
products is that right yes we are always
working to have new products and the new
one this year is a one here a small net
uh filled with Clementine Jam it’s
Clementine from C and it’s really really
it’s a nice product and I hope our
consumer will love it as much as I love
it and I think it’s really amazing for
American tourists to come here first
because you’re the ninth generation and
your daughter the 10th taking over
little by little as well so what can
tourists expect when they come to do a
visit at um M our visitor will discover
the story of the family the story of the
spice bread in D the spice brain in the
world and after they will discover how
it is produced so the thing is if the
machines have changed the process is the
same I’m very impressed that your family
recipe has not really changed and that
you still have the human touch on the
product there are still people that are
are interacting with the product and I
think that’s very important when we lost
saare it’s a p so we are very cautious
to keep all the
sare I imagine that your business is
going to continue on as an independent
family business for generations to come

all about the black currant which is a
lesser known fruit in the United States
but as I’m told is a new superfood yeah
we can totally say that black her didn’t
use super fruit because you can use the
entire plants you can use for example
the berries for blood circulation or the
leaves and the bed for skin condition or
joint

problem so here at cesium you have
created a whole world around the black
current when tourists come here what can
they expect so they can discover the
museum it’s a very interactive Museum
about blacker the history the different
uses
also then we will go in the factory to
see the production of black C liquor and
at the end they can have a little
surprise the tasting of the products and
especially the super

cases so the apparal Spritz is kind of
the cocktail of the moment but the
tradition
classic French apparati involves the
black current Yes actually the the very
traditional apparative in French is a k
so K is made with black current liquor
here we make it with super kisses and
with a white wine dry white wine and
especially the BG aligot and you can
also make a light difference uh with the
sparkling wine and you have a k so in
burgundy we use CR B yes but you can
also use it with champagne for example
and so your product is called super
Cassis why is that um super CIS is
because we have a lot of berries in the
recipe and you can easily see the
concentration of fruit in it just like
that you can see this color is to say
that it’s a great black current
leaker what are some of the other best
sellers that you have here besides
because you have a grand assortment of
flavors um other than the CIS yeah the
besteller we have after ques is Elder
flour liquor it’s very nice also for
cocktail and if you like to mix some
Liquors we also have some Mixology
session uh every first Friday of the
month uh between April and uh October
and uh vren is having a special year
this year yeah it’s a very big year for
us because we have a a big anniversary
uh vetan was created in 1923
uh in George so you can easily calculate
it well

mustard welcome to theber fell so the
first question I have to ask U we know
that for example to call something
champagne it must be made within the
region of champagne uh so it seems
logical to me that djon mustard is made
in Dion but we’re not in Dion yes we are
not in D we are in B and the difference
is that D mustard is just a receip and
you can find dig mustard all over the
world in mutal we produce uh the
burgundy mustard and that must be made
in burgundy yes only in burgundy yes
because we are the
pp it’s a label this label proves that
you can buy only this mustard in
burgundy you are constantly adding to
your flavors and I love that you make a
lot of them with ingredients that you
find in burgundy approximately we have
30 uh different flower uh in mat for the
burgundy we have a black currant we have
gingerbread so the most famous in
burgundy after we are more
specialities like cacao we have also
saffron C tagon bisil and that’s all and
it’s very nice because the people can
test something different like uh it’s
different to the original and it’s very
good A lot of times we see alen with the
grains in it and often times people are
afraid of of that one that it might be
very spicy is it more spicy no it’s not
more spicy some sometimes it’s it’s less
spicy it’s depend you know that the
American people prefer the DJ the
classic

DJ Pho is a family on company and um
you’re very small about how many people
does it take to operate the master
Factory we have approximately 25 people
uh in the factory in the shop in the
office welcome to the
bar oh it’s lovely I understand that you
do several different types of visits do
they both end here yes we have two
visits it we have the s for so it’s a
factory and we have the parkour it’s
most of the museum so you have all the
the machine but uh the machine that we
use before it’s a very nice visit
because you can do your own mustard you
make your own mustard wow so it’s very
good what do you want to test um
something very typical from the region
okay you can test the burgundi that I
told you before

lovely it’s a little spicy but it’s very

mer so your story is one of wine but
also of family yes tell us a little bit
about that of course thank you for
coming in burgundy uh PRI is a very
small village of 400 habitants and I am
the 19th generation of this family so it
start in 16 something for a very long
time family and the transmission is very
very important for us my dad Olivia leev
have four children for the moment I am
the only one uh in the in the business I
start uh during 17 years with the hotel
and now I’m joining the wine company so
it’s a A New Beginning for me
transmission is important about the sa
uh about the vineyard and about the wine
making but also about uh welcoming the
customer from all over the world so it’s
quite important for us to to meet the
people and to explain them how we make
wine how we do the decision about the
family and and we start the hotel 17
years ago now so first we have a table
do and it was quite interesting because
the people come in a Pini moash and do
wine tasting with a 20 different white
wine at that time now it’s forbidden and
a little and the people are staying more
and more and they stayed until like 8:00
in the evening so my father decide to to
put some rooms and the people can sleep
now we have 17 rooms we have a
restaurant gastronomic for dinner we
still have the bistro with a wine
tasting and a simple dish for lunch and
we do a lot of activities we do a visit
of the vineyard so we are going in the
vineard just in front of the hotel and
uh we give aink 1 hour and a half
explanation inside the field with our
suier so technically they need to
understand really well how the clema is
working here and how small uh plots
everywhere are divided and how we can do
wies with one kind of rep which is
shardon or pinoa but all the plot is so
different and sometime it separate one
meter to each other so it’s very
interesting to to do this visit and it’s
a good ex introduction uh for
understanding better uh the vineyard
then we do also visit of the Sellar so
my father and my uncle who are still in
the company and they come every day
lunch and dinner to say hello to the
customers so it’s really important for
us to have the family who meets the
people every day we share the the love
of wine and and and food so this is
really important so they do every
Saturday the visit of Sellar The Cellar
is still in P also so we do the visit
during 1 hour and they explain how we
make white and red wines so we go inside
a CU and they see the tank and the
barrels and everything and then the
people can do the wine tasting lunch so
they have a lunch with three or seven
wines to taste you have a s he give
explanation you can compare you can
introduce food and see how it works and
how it change your tasting so uh yeah
it’s very educational
and delicious I’ve done that one it’s
wonderful thank you and we also have a
new activity which is very fun it calls
the wine bike experience it’s like a big
Collective bicycle like like beer bike
in in Holland so it’s wine bike and
there is a bar in the middle of the
bicycle we can be 12 people they pedal
they go in the vineyard it’s my father
who drive again and we drink the wine of
the parcel in the parcel so it takes 1
hour and a half explanation it’s a
private and intimate moment with my
father in the vineyard so it’s very fun
and very private and it works well
because it’s kind of unique also to have
the tasting in the in the plot yes in
the room we uh decided to uh renovate a
lot of room 3 years ago during the co
and uh we make a big family tree at the
reception desk and we dedicate all the
rooms to somebody of the family so each
rooms have a name uh of family people
and inside the rooms the decoration is
close to the personality of uh the
people uh of my family and there is a
little text who explain the the the life
of uh of the people so when you go to
this house it’s really uh like you are
invited to share a moment with the
family
