hi I’m head roast at chimy fire coffee
welcome to my world it’s the Aeropress

world so I’m going to show you two very
simple recipes with the Aeropress I say
it’s my world because it’s my go-to uh
brew that I like very very much with any
coffee that we roast I’ll put it through
the Aro press test so I’m going to do
this live with you today this is
actually a lovely purple aerrow press
the addition to their new range and it
is is our team Arrow Press so it’s
purple it’s lovely and I’m going to do
the longer shot in this one now it’s all
about ratios and grind setting so for
this one the ratio is 20 G of coffee to
200 Millers of water so one to 10 very
simple and if you want less coffee more
coffee you just adjust that the grind
setting is kind of a medium Co grind
setting so I pregs 20 G of coffee which
are should actually mention I’m using
the inverted method of the AER press the
reason being that you can really
saturate all the grinds very very nicely
to make sure that you have an even
extraction here we go
so we got 20 G of coffee I’m going to
tear and then I have heated water to 96°
but don’t be too finicity about it it’s
a simple simple recipe if you’ve just
let it boil and then wait for a minute
or so it’ll be absolutely fine the
important thing though is the time that
you’re going to uh Brew your coffee so
these scales are great because they have
a timer integrated so I’m going to
activate the
timer little beep and I’m going to start
pouring so I pour quite
gently don’t worry if it’s not saturated
at a moment because we’re going to
actually stir it quite
vigorously once the recipe is done okay
here we go I’m going to take it off
makes things a bit easier I’m going to
stir it I usually count to 10 so let’s
count 1 2 3 4 5 6 7 8 9
10 put that
aside and this is the the filter I’ve
pre-washed the paper filter I’m going to
put that on top make sure it’s really
tight and the other thing I like to do
is because there will be a bit of air
left but try and get the air out
gently and then I’m going to brew into
this vessel so the Brew time is 1 minute
32 makes people chuckle I do that
because before you really press and so
on maybe 2 seconds are gone the actual
Brew time is a minute 30 so I’m going to
turn this upside down looks more
skillful than it is it’s very easy you
just practice a little bit we got
another 20 seconds to go the other
interesting thing is that you need to
really press down quite gently so the
press down should be about 20 seconds
let’s see if we can do that so we are on
minute 32 exactly and to press
down all right very

gently and we are at 1 minute
48 so we nearly did it in 20 seconds you
know it’s not that strict the main thing
is that you do it in an even way so
let’s see we can decer into oh I should
have mentioned actually that we’re using
the Peru coffee the reason for this
being that it’s a very very versatile
coffee it works very well as a filter
coffee filter coffees open the notes a
bit more and it also works very well as
an espresso here we’re going to then
show you a more condensed version that
you can either drink in a condensed
version or you can put milk to it well
let me just decanter you can just see
that this is more kind of filter likee
and its
consistency and there you have it the
air press with a Peru washed coffee and
extracted with ratios 1 to 10 20 G of
coffee 200 mL of water uh Brewing Time 1
minute 32 press down very gently and
serve I don’t really like drinking it
when it’s too hot hot it just scolds my
palette can wait a little bit um but
trust me it’s really really delicious so
we’re still in the Aeropress world but
this time we’re going to do the
condensed version same method inverted
method just the grind setting is quite a
lot finder it’s more like an espresso
grind setting the other difference is
the ratio so we’re still going to keep
20 gr of coffee but we’re going to have
the water that’s going to be added to it
so one to five so we’re going to have 20
G of coffee to 100 mL of water still the
Brewing time will be 1 minute 32 just in
case and uh we’re just going to go for
it and that’s going to be a condensed
version that um you know you you if
you’re an espresso uh a drinker that’ll
come close enough I’d say and if you are
a milk-based drinker so it’s so
condensed that the milk actually will
cut through the extracted coffee right
so here we go we’re going to take
yep tear it and we’re going to start
pouring again this is the scale that has
an
integrated timer which is absolutely
fabulous right here you got to really go
very gently so you don’t overshoot so
just keep an eye on the scales we’re at
60 we’re at 80 don’t want to go too high
there we go on the nose how’s that I’m
going to take it off the scales because
again the most important important thing
is that you really agitate so just swell
it
around 10 times or so so all the ground
coffee
saturated with the water again what I
like doing is I like just pushing it a
little
bit actually it’s probably better to do
it with the filter on so you don’t have
an accident so tighten the filter and
then just get the air out so you can
push it until you see a few bubbles
coming out of the
holes then you’re going to take the
vessel you want to extract into and
you’re going to quickly turn it over
like that looks cool and then you’re
just going to wait you’re going to wait
and of course you can just have it as an
espresso or you can have it maybe as a
lter so it’s totally up to you this is
the flat white but this is actually the
filter coffee that we preferred earlier
it was a bit too hot but I’m going to
drink it I know it’s going to be
delicious so we got another 20 seconds
to go
and again we’re just going to push down
quite gently there’s going to be a bit
more resistance because the grind
setting is finer but again there’s less
water so it’ll take roughly about the
same time here we are 1 minute 32 and
I’m just going to push
gently into the
vessel I reach the bottom a there’s only
one thing to do stop and
pour all right here we
go so and it’s so clean everything you
just kind of turn it upside down and
here it is so I’ll show it you in the
espresso you can already see that it’s
quite
dense all right so here we go there a
beautiful coffee and maybe you can see
it’s darker and this is a bit lighter on
the um filter coffee it just opens up
the notes a bit more as I said this is
still the Peru coffee very versatile
Works a treat as a filter coffee and
works really really well as an espresso
and obviously with milk so I’m going to
go and this has cooled down quite nicely
now I’m going to have the um washed Peru
just as the
filter that’s the temperature I really
like so it’s got a bit of acidity up
front which is lovely it just Tails so
nicely into something quite mellow and
sweet um at the end still you got the
chocolatey ner so the darkness comes out
that’s the word the darkness the more
kind of earthier notes come at the end
which tells me that actually as an
espresso milk just doesn’t get lost in
it it just really opens up and adds even
more sweetness with the milk that you’re
going to add I’m going to have another
sip actually cuz it is really really
nice well the reason why I like this one
so much is because of its versatility
also being the head roaster it roasts
really will that’s always a bonus so the
consistency in our roast is very easy to
keep and um yeah it’s just uh you can’t
go wrong with the Peru is what I think
so I’m going to now have the more
condensed
version yeah it’s really good well it
does it does kind of how can I um
accentuate everything that it has which
um it still has the acidity it’s a bit
kind of Blackberry like it still has
that at the beginning and what I like so
much about any coffee is a journey so if
it takes you from one thing to the next
and just to savor the experience of
drinking coffee whichever way you like
it anyway I hope you enjoyed the a press
condensed version and the filter version
and then I would actually encourage you
to play around a little bit that’s my
ratio 1 to five for the condensed 1 to
10 for the filter you can go 1 to8 if
the 1 to 10 might be a little bit too
too open for you you could just play
around and that’s the beauty of the aror
press this is why it’s my go-to and it
is such an amazing amazing Brewer so
