A word about our recipes:

1. Tomato Onion Relish
Make sure to use ripe or over-ripe skinless tomatoes, mixed with onions. Use a factor of 2:1 so 8 tomatoes will need 3 or 4 onions, both cut roughly. Make sure the stems are removed from the tomatoes. Refrigerate overnight to remove as much water as possible. Once the water is poured off, add about one LB of sugar to the mixture, add a tablespoon of garam masala and cover with white vinegar. Boil on low heat for 2 to 3 hours. As you sample, add sweet mustard and/or cayenne pepper to taste. The real keys to making this relish so delightful is taking time to remove water, adding garam masala and boiling in vinegar. It’s certainly not a quick dish to make but it will set your table apart.

2. Mayonnaise
Off the shelf mayonnaise is limited to 65% of the mixture. The real keys to making this a unique condiment are fresh and crushed pineapple (15%), taking out the liquid, and adding either curry or garam masala at 1% to 2%. Mix in white sugar (10%) and an off the shelf honey-mustard (9%). If you want some heat, we recommend adding a pinch of chili pepper. This gourmet condiment pairs well with seafood, charcuterie and, French fries.

3. Satay Sauce
As we mention in the video, we strongly recommend off the shelf Indonesian ingredients, which not only makes this condiment so easy to make, but also stunningly good. You can buy peanut powder (Sate) and add coconut milk to thicken. Then finish off the condiment with Sweet Soy Sauce (also called Kecap Manis). One or two tablespoons does the trick! We recommend the Indonesian ABC brand. Lastly, if you want some heat, you can add a pinch of chili paste and stir well. Serve warm.
