What’s going on, everybody? We made it to the fondue restaurant that we’re going to be eating at today, and we’re super excited because it is super historical. Laying in the heart of Paris, Le Vioux Bistrot is surrounded by history – including, Ernest Hemingway’s building nearby.

So we just sat down right now and I know we’re going to get the Raclette because we want the whole giant wheel for two! We’re going big today! Our experience is already off to a good start as the restaurant owner is serving us directly!

There were lots of things to choose from such as fondue, foie gras, and truffle! However, we decided to go with the charcuterie board and raclette for €64 euros This particular cheese is the perfect melting cheese, becuase it’s creamy with notes of sweetness and a mild pungent aroma.

Raclette is a very popular soft cheese from Switzerland. It is melted and traditionally served on, or with, potatoes, and pickles, or bread. Raclette is the cheese of legend, based on the story of a man from Valais by the name of Leon. One cold day, with food scarce in the open pastures, Leon heated up a piece of cheese on the open fire to ease his hunger and keep warm.

He found the melted cheese had a transcendent flavor. It not only complemented other foods – it made a great, satisfying meal for his family. Popular since the Middle Ages, Raclette is still produced with milk from cows that are fed fresh grass in the summer and meadow hay in the winter.

Here the owner gave us a private lesson on how to eat this dish properly first grab a potato and smash it up. Raclette comes from the French word that means “to scrape” and refers to both the type of cheese and the traditional Swiss dish it is served with.

You scrape your cheese and drizzle it on the potatoes and all the ham and then you eat. Now, we’re going to go in for a bite of this salami! Big fat scoop of cheese! VOILA! OHHHH! That’s fantastic! Now let’s get into the potatoes

The cheese is melted perfectly and pairs so well with every ingredient on this charcuterie board. Trying the owners method to see how that tastes… again, smash it up. then you scrape the cheese drizzle it all over the potatoes Wow look at that cheese pull! well, that’s a lot of cheese

Look at it bubbling up! I love it! Raclette cheese melts at a temperature of 40°C. The first evidence of the presence of cheese in Valais dates from the 4th Century BC. During the Roman era, it was used as a means of payment.

We are getting full but the more it melts the better it becomes…. there’s still so much more to go. Yep, that’s exactly what I was about to say. This is the aftermath of it. We did nothing. We absolutely did nothing. We still have leftovers everywhere.

We could barely finish it. I’d give it a 10/10 for serving size! now I’m going in for one of my final bites. I’m way too happy eating this. Gained 10 pounds this meal for sure. So we just made our way out of the restaurant and we feel like cheese wheels ourselves.
