Ingredients:

660g bread flour
300ml milk
60g sugar
10g yeast
2 large eggs
1 tsp salt
140g unsalted butter

Instructions:

Activate the yeast: Start by warming the milk until it’s just lukewarm. It should be around 110°F (43°C). Dissolve the sugar in the warm milk and then sprinkle the yeast over the top. Allow it to sit for about 5-10 minutes until it becomes frothy.
Mix the dry ingredients: In the bowl of your dough mixer, combine the bread flour and salt.
Add eggs and yeast mixture: Crack the eggs into the yeast mixture and whisk them together. Pour this mixture into the dry ingredients in the mixer bowl.
Knead the dough: Attach the dough hook to your mixer and start mixing on low speed. Gradually increase the speed to medium as the ingredients come together. Knead the dough for about 5-7 minutes until it becomes smooth and elastic.
Incorporate the butter: While the mixer is running, gradually add small pieces of the softened unsalted butter to the dough. Allow each piece to be fully incorporated before adding more. This process may take 10-15 minutes.
Continue kneading: After all the butter has been added, continue to knead the dough for another 5-7 minutes until it’s smooth, elastic, and no longer sticky. The dough should pull away from the sides of the bowl.
First rise: Form the dough into a ball and place it in a lightly greased bowl. Cover it with plastic wrap or a clean kitchen towel. Allow it to rise in a warm, draft-free place for 1-2 hours, or until it has doubled in size.
Divide and shape: Once the dough has risen, punch it down to release any air bubbles. Divide it into equal portions for your desired bun size. Shape each portion into a ball and place them on a baking sheet lined with parchment paper.
Second rise: Cover the shaped buns with a clean kitchen towel and let them rise again for about 45 minutes to an hour, or until they’ve doubled in size.
Preheat oven: Preheat your oven to 375°F (190°C).
Bake: Bake the buns in the preheated oven for 15-20 minutes, or until they are golden brown on top and sound hollow when tapped on the bottom.
Cool: Allow the buns to cool on a wire rack before using them for sandwiches or burgers.
