Ingredients:
For the Fried Chicken Baguette:
2 boneless, skinless chicken breasts
Salt and pepper, to taste
1 cup all-purpose flour
2 eggs, beaten
1 cup breadcrumbs
Oil, for frying
Baguettes or French bread, sliced
For the Roast Chicken:
1 whole chicken (about 4-5 pounds)
Salt and pepper, to taste
2-3 tablespoons olive oil
2-3 cloves of garlic, minced
1 lemon, halved
Fresh herbs (rosemary, thyme, or sage), optional
For the Mashed Potatoes:
4 large potatoes, peeled and cubed
Salt, to taste
1/2 cup milk
2 tablespoons butter
Optional: chopped chives or parsley for garnish
Instructions:
Fried Chicken Baguette:
a. Season the chicken breasts with salt and pepper.
b. Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs.
c. Dip each chicken breast in flour, then egg, and finally breadcrumbs, pressing the breadcrumbs onto the chicken to adhere.
d. Heat oil in a skillet over medium-high heat. Fry the breaded chicken breasts until golden brown and cooked through, about 5-7 minutes per side. Remove and drain on a paper towel-lined plate.
e. Slice the baguettes or French bread and assemble the fried chicken baguette by placing a fried chicken breast inside each bread.
Roast Chicken:
a. Preheat the oven to 375°F (190°C).
b. Pat the whole chicken dry with paper towels. Season the chicken cavity with salt and pepper.
c. In a small bowl, mix olive oil, minced garlic, salt, and pepper. Rub this mixture all over the chicken, including under the skin.
d. Place the lemon halves and fresh herbs (if using) inside the chicken cavity.

c. Add milk and butter to the potatoes and mash using a potato masher or fork until smooth and creamy. Season with additional salt if needed.
d. Serve the mashed potatoes alongside the roast chicken and fried chicken baguette.
