– 8 cups of all-purpose flour (1200 g)
– a pinch of vanillin (1 g)
– zest of 1 lemon
– 8.5 oz of butter (240 g)
– 1/2 cup of raisins (100 g)
– 1/2 cup of candied fruits (100 g)

Fermentation of batter – 40 min. – 1 hour.
Dough fermentation – 1.5 -2 hours.
Proofing Brioche – 30 -40 minutes.
Bake at 340 degrees Fahrenheit (170 degrees Celsius)
